One of my favorite products to use in desserts is chocolate. As I am originally from Belgium, I have worked with this product for years and years.

This recipe of Belgian Chocolate mousse only consists of 4 ingredients and a splash of milk (depending on the bitternes of the chocolate).

It is a tasteful dessert, easy to make in advance. After it sets in the fridge you can serve it with fresh red fruit and a hint of mint.

Servings: 4

Prepping time: 20 min

Cooling time: 3 hours

  • 4 oz dark chocolate (60% cacao or higher)

  • 1/4 cup granulated sugar

  • 2 egg yolks

  • 1 cup heavy cream

  • splash of milk

  • Melt the chocolate over a double boiler

  • In another bowl; whisk the egg yolks and sugar together until it turns white

  • Beat the heavy cream until you get the "Irish coffee thickness", when you start seeing lines in the cream

  • Poor the melted chocolate over the egg mixture and mix well.

  • Add a splash of milk and mix well. Do this as quickly as possible, so the chocolate doesn't turn into chunks

  • Now fold the heavy cream under the chocolate mixture

  • Store in fridge to set for about 3 hours

  • Serve with red fruit and mint
